All Dino’s in my server are 280 lvl maxed at 300.
But after taming they won’t go any higher then 7 levels. And the exp cap is maxed to 600.
Idk what’s going on. And I’m not good with messing around in expert mode to try and figure it out. 
Any help will be appreciated.

You dont necessarily have to be in expert mode to.male these changes. You can make the changes for these dino levels in regular mode.
The setting is difficulty override set to 10
What coding are you currently using as well? That's most likely where the issue is. Best thing to do here is usually to start over coding wise.
set your override to 1 and your offset to 10

You should be good with these setting here. My dinos spawn at max 300.
if all you're wanting right now is dinos at 300 you just need to do what I showed in the picture we can talk more from there
Here are my settings. They're pretty quick but you can get to 100 imprint on pretty much everything. Takes maybe 25 minutes or so for the imprint
