I have two friends that play on a server with me who state once me and another friend joins, the console opens up and spams this line of text periodically: "IndexOutOfRangeException: Index was outside the bounds of the array." Every once in a while it would sometimes spam it in bulk. The other friend who I play with says it doesn't happen to him, and I also do not receive this error.

I feel obliged to help since we were plagued with this as well.. It's the people WITHOUT the error that need to do this, It happens usually when the person not getting the error uses an item. They need to completely uninstall the game and delete BOTH 7daystodie folders, one in steamapps and other in %appdata% / Roaming. BEFORE THAT open steam library > click 7 days to die and click PLAY > open the launcher > click tools and clear ALL game data, THEN go in and delete those two files. Reinstall and you should be good to go.
Hope this helps, i only found one thread in my hours of looking everywhere to fix this, Have everyone NOT getting the error do this. -
