So, I've paid for a 20 slot Ark server, it's not my first time, and the money had gone in. But I've been sitting here for half a day waiting for my order to be processed. I don't know what to do.

If you wanted an XBox server, you would need to purchase through the app. Did you?
If you wanted a PC Server, did you purchase through this site?
You can also try a reinstall and see if that works.
If not, please contact Nitrado Support by calling them or creating a ticket.

I did it for Xbox through the app yes but it's being a shit and not processing my order. It's come down to a drinking game where every hour that has passed eating I take a shot. I'm halfway through my bottle. Also, as I type this, the damn thing stopped processing my order and wants me to redeem my server AGAIN.
It just keeps failing to process it.

This is known and can be solved by doing the following:
Make sure the app is up to date with version 1.6.8 or above
log out of your Xbox Nitrado App
close the app (hit the xbox button and keep the app highlighted, then hit the menu button and Quit)
launch the app
log back in
You will then have your service or need to redeem an unfulfilled purchase.
I aslo had this issue,i solved it by logging through my pc and installing the app and launching it that way.
